3/4 cup milk
1-1/2 lb. lean ground beef
1 pkg. (6 oz.) STOVE TOP Stuffing Mix (Chicken or Turkey)
3/4 cup shredded cheddar cheese
1/3 cup of BBQ sauce (any brand)
3 green onions, sliced
6 slices bacon
½ cup ketchup
2 tbsp brown sugar
1 tbsp Franks Red Hot Sauce (optional)
Whisk eggs and milk in large bowl until blended. Add all remaining ingredients except bacon; mix lightly. Shape into 6 (1-inch-thick) patties; wrap bacon slice around edge of each patty.
If baking immediately: Combine the sauce ingredients; spoon a small amount over each mini meatloaf. heat oven to 375ºF. Place on rimmed baking sheet sprayed with cooking spray. Bake 40 to 45 min. or until done
If making ahead and freezing: Do not add sauce. Wrap individually in plastic wrap; place in freezer-weight resealable plastic bag. Seal bag. Freeze up to 3 months. Add sauce right before baking. Bake at to 375ºF for 55-60 min. or until done.
Tip: Make double the amount of sauce and spoon more over the mini meatloaves 10 minutes before they are done cooking.
