2 cups chocolate cookie crumbs
4 tbsp butter or margarine, melted
4 cups chocolate chips or wafers, preferably semisweet
1 cup milk
1 tbsp instant coffee granules
½ cup icing sugar
Chocolate shavings or melted chocolate to drizzle
Use no smaller than 8.5” x 13” Tupperware.
Mix cookie crumbs and margarine and press into pan. Chill.
In top of double boiler on low heat melt chocolate chips or wafers.
Heat separately the milk, coffee granules, and icing sugar.
Add to melted chocolate, stir gently till smooth. Cool to room temperature, NOT CHILLED.
Add chocolate mixture to Nutriwhip, 1/3 at a time, beating well each time. Spread over crust and chill.
Can be topped with chocolate shavings or drizzled with chocolate (which really messes things up when you want to cut them).
Cut 6 x 9 for 54 squares.
I have also used this as filling and icing for a chocolate jelly roll if you need a more complicated dessert!
